Amanda A-mangia: Lunch box frikkadel

Frikkadels are a quick, cheap and easy addition to your lunch boxes.

500g minced beef

1 medium onion, finely chopped

1 cup soft breadcrumbs

3 garlic cloves, crushed

1 tsp ground paprika

2 tbsp fresh parsley, chopped

1 tbsp fresh thyme, finely chopped

Salt and pepper to taste

2 eggs

2 tbsp sunflower oil

  • Combine all the ingredients and mix well.
  • Form the meatballs by rolling portions into small balls and pressing down slightly to flatten them.
  • Heat the oil in a non-stick frying pan and brown the meatballs on both sides (about 15 minutes).
  • Reduce heat and fry until cooked.
