Lacuna Bistro welcomes renowned chef
SANDTON - Renowned chef Jason Millar was officially introduced as the new executive chef at the Maslow Hotel's Lacuna Bistro in Sandton.
The Bryanston resident took up the helm at the hotel following his relocation from Cape Town where he worked at prestigious hotels such as The Table Bay, and One and Only Cape Town.
Millar expressed excitement at being back in Johannesburg and explained the changes he would bring to the restaurant.
“Of course we will change the dynamic at Lacuna, but essentially we’ll stay true to the concept of a bistro which is what Lacuna is known as,” he said.
Millar added that his intention would be to modernise and bring his own signature to the new menu at the bistro.
Well-travelled and passionate about food, Millar also spoke fondly about the art of creating exciting but classical dishes that people can genuinely enjoy.
“As a chef, I’m not concerned with the science of food but rather the art of creating food because I don’t cook to impress, I cook to please,” he said.
Aside from creating mouth-watering dishes, Millar said he enjoyed spending time discovering butcheries, a passion of his, and spending time at home cooking with his sons.
Millar, who began his career in the United Kingdom has always had a keen interest in food, since childhood, but mentioned that he never expected that he would one day make a career out of it.
