- Half an English cucumber, diced
- 6 radishes, thinly sliced
- 1 stalk celery, thinly sliced
- 1 green pepper, seeded and chopped
- 4 spring onions, thinly sliced
- 40ml chopped parsley
- 50ml French salad dressing (optional)
- 500g cooked rice
Method:
In a large bowl, toss the cucumber, radishes, celery, green pepper, spring onions, parsley and dressing with the rice.
