Ingredients:

  • Half an English cucumber, diced
  • 6 radishes, thinly sliced
  • 1 stalk celery, thinly sliced
  • 1 green pepper, seeded and chopped
  • 4 spring onions, thinly sliced
  • 40ml chopped parsley
  • 50ml French salad dressing (optional)
  • 500g cooked rice

Method:

In a large bowl, toss the cucumber, radishes, celery, green pepper, spring onions, parsley and dressing with the rice.
