Three Watermelon Recipes

Summer days beside the pool … and it’s watermelon season! Yay! Here are three ways to serve this juicy fruit to family and friends

Watermelon pizza

Take 1 slice of watermelon and cut into wedges as you would a pizza and lay on a board. Remove pips. Scatter over the top 120g pieces of pineapple, a few coriander or Thai basil leaves and 1.2 tsp toasted coconut flakes (or more if liked). Mix the juice of ½ a lime with 1 Tblsp honey and drizzle over the top. Sprinkle with freshly cracked black pepper and zest of ½ lime.

Watermelon salsa

Finely chop 200g watermelon, 2 small shallots and a small bunch of coriander. Mix together with juice of ½ a lime and 2 Tblsps olive oil. Season and serve as a dip or pile on top of cheesy nachos.

Watermelon and feta salad

Chop 180g watermelon and ½ a cucumber into chunks and tip into a bowl with leaves of ½ bunch of mint and drizzle with 1 Tblsp olive oil. Season and pile onto serving plate. Crumble over 100g feta, extra mint leaves, then drizzle with 1 Tblsp balsamic glaze just before serving.
