Scrumptious pistachio recipes
Today is pistachio day. Here is a pistachio pasta recipe to warm your heart… and with the hot weather continuing, a delicious dessert is just what we need to cool our blood and calm our nerves.

Buy some good quality vanilla ice cream and mix in some chopped pistachio nuts and honey to taste. Return to freezer.
Or make your own pistachio ice cream from scratch
Pistachio and rosemary tagliatelle
Ingredients:
2 medium cloves garlic, peeled
1/2 cup roasted/salted pistachios
2 cups baby greens of your choice
1/4 cup grated parmesan cheese
2 tablespoons chopped fresh rosemary
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon black pepper
1/4 teaspoon salt
1/3 – 1/2 cup extra virgin olive oil
Method:
Place the peeled garlic in a large food processor and turn on until garlic is chopped. Add in the pistachios and process until you have pebble-sized pieces. Add the greens, parmesan, rosemary, lemon juice, pepper, and salt. Pulse until mixture is chopped and combined. Add the olive oil.
